Hi Herbies! HH seemed to be a little concerned that when she left..Scott and I would resort to only eating PB & J sandwiches. I might be the pickiest vegan ever, it wasn't until I got here that I tasted things like..miso, vegan mayo, and I have finally stopped refusing to eat things that have mustard in them.

Foodie Friday: HH's Last Week

Hi Herbies! Hope you're all having a happy Friday ;] This week we celebrated Labor Day, ate salads, went out to eat and made HH's "last meal" before her big trip!

For Labor Day, we made baked BBQ tofu, corn on the cob, cauliflower mashed "potatoes", and baked beans from The Happy Herbivore Cookbook (p. 199). I had never had baked beans before, I ended up liking them.

Bon Voyage!

Eggs (and how to replace them) always seem to be the big hang-up or confusing part of vegan baking. The good news is, you don't need eggs to have terrific baked goods, they can easy be replaced and substituted out. (That also means you can go hog wild with uncooked batter and not worry about getting sick!)

Celebrate: Acorn Squash Day!

Today is Acorn Squash Day! Squash is a great fall vegetable, and from what I hear...there's signs of autumn popping up in the States. Acorn squash is an excellent source of fiber, vitamin A, vitamin C, and potassium.

Why not celebrate with HH's Acorn Squash and Apple Soup?

You can also cook an acorn squash and scoop out the center and stuff the acorn squash. You can use a couscous or rice, it makes for a beautiful presentation!
