Today I'd like to share my favorite gluten free cookie from Everyday Happy Herbivore. These molasses cookies are soft and fluffy and super easy to make. 

Soft Molasses Cookies | yields 14 cookies

*gluten-free*

1 c oat flour
1 tbsp cornstarch
 ½ to 1 tsp baking soda (see note)
 ½ tsp ground cinnamon
¼ tsp ground ginger
