Acorn Squash & Apple Soup Recipe

Posted by:Lindsay S. Nixon Category: Recipe

I was tempted to call this "apple pie soup" because it fills the house with that exact aroma when it's simmering. Who needs glade candles? Just make a pot of soup! This simple soup is pure bliss -- the apples and cinnamon naturally compliment the squash flavoring and the hint of curry with a touch of nutmeg helps capture the essence of Autumn. (It's even better the second day!) Enjoy!!

Oh!! and I made it for my lovely friend Mindy, who told me red lentil soup was her favorite dish to order at restaurants.

Truth is, I've owned Vcon since it came out about a year ago and I've only made about 5 dishes... so it's been nice to "get my monies worth." Anyway, I went a little …

Vcon: Tofu Po'Boys

Posted by:Lindsay S. Nixon
I need to admit right off the bat that I didn't make the chipotle mayo or the coleslaw that goes with this recipe. It's quite dry... even when loaded with pickles. …
