We begin the 30 WHOLE Days Challenge... tomorrow! More than 100 people have signed up and together we'll spend the month of May eating only whole, unprocessed foods. Fat-Free Vegan Single-Serving Cupcake

Opps! I did it again... After making a single-serving brownie, a single-serving muffin and a single-serving blueberry crisp I knew it was time to attempt a single-serving cupcake... a skinny cupcake!This vegan cupcake is whole wheat, fat-free and totally guilt-less...

Celebrating Earth Day

Every year on Earth Day (April 22) I ask my non-veg family and friends to try veganism for the day.

Eating a wholesome vegan diet is about the greenest thing you can do for the planet and making decisions with your fork is a whole lot easier than planting a tree (though still plant one if you can!)

So this Earth day, why not choose plant foods and help curb carbon emissions?

Tofu-ed!

Wow! 100+ people shared how they DO tofu! By far the most popular way to eat tofu was a la tofu scramble and other popular methods were sauteed and eaten on top of a salad or along side veggies; or slipped into a smoothie or dessert. Many tofu-ers also expressed they preferred freezing tofu -- which if you haven't done, you must try! It really changes the texture of the tofu to almost a meaty/ground beef-like consistency.
