Inca or Aztec Corn Soup Recipe Posted by:Lindsay S. Nixon Category: Recipe

I'd never heard of quinoa until I was vegan and quite frankly, I still pronounce it incorrectly half of the time. I've read enough veg magazines and cookbooks to know quinoa is good for me and I've done a pretty good job at incorporating it into my regular diet. I was recently introduced to amaranth, which is a close relative to quinoa, only smaller.

Low Fat Vegan Chocolate Cherry Cheesecake Recipe Posted by:Lindsay S. Nixon Category: Recipe

If you loved my traditional almost fat-free cheesecake recipe, you're in for a real treat with this variation! For starters, I used chocolate gram crackers for the crust. Chickpea Cakes Piccata Recipe (Vegan Chicken Piccata) Posted by:Lindsay S. Nixon Category: Recipe

I was rumaging through my fridge for dinner ideas when I found a bunch of asparagus on the verge of going bad. I was also in the mood for something lemony, so piccata seemed like a good fit. I'd actually never had piccata until I was vegan and the one time I tried to make seitan piccata …

Low Fat Vegan Chocolate Ice Cream Recipe (Tofu Ice Cream) Posted by:Lindsay S. Nixon Category: Recipe

It does exist. I know, I'm a horribly mean blogger for posting another vegan ice cream recipe when many of you don't have ice cream machines and others are still freezing through a long, cold winter... but ohmigod its sooo freakin' tasty I can't help but scream about it. Plus its our 3rd wedding anniversary today so we're entitled to a little chocolate, right?
