Today we're celebrating Peanut Day! While The Happy Herbivore Cookbook is made up of recipes without any added fat, there are a few "cheater" recipes that aren't completely fat free. The "Cheater" Pad Thai (p. 117) uses a little peanut butter to create a delicious pad thai sauce that you can serve over noodles or vegetables, or even in a salad. Enjoy!

Today is Acorn Squash Day!Squash is a great fall vegetable, and from what I hear...there's signs of autumn popping up in the States. Acorn squash is an excellent source of fiber, vitamin A, vitamin C, and potassium.

Last night on Facebook a fan let us in on their favorite 'fast' food- Dominos cheeseless pizza with our pizza sauce from The Happy Herbivore Cookbook (p. 242) slathered on top! Ever since we saw the post, we've had pizza on the brain so tonight's dinner was a pizza party!
