These tacos took my vegan blog to a popularity level I never dreamed of. I'm going to toot my own horn here and say that these tacos flippin' rule. If you don't like them, something is seriously wrong with your tongue. This dish is also another great weekday meal. It comes together in about 30 minutes from start to finish but you can make the chickpeas a few days in advance for an even quicker meal.

These cupcakes and my chickpea tacos are the two dishes that really "put me on the map" as a vegan blogger. I'm incredibly proud that they're such a hit because its not every day a vegan carrot cake rules the school - especially a fat free, healthy one. By the way the maple icing is so good, you'll want to eat it with a spoon.

There are a few things I'm really picky about, but if I ever compiled a list, bagels would be at the top. Blame it all on New York City and the bagels I grew up eating.
