This Week's Q&A: Substituting Fresh Ingredients for Dry Spices & Herbs, Cooking without Oil, Substituting Applesauce, White Whole Wheat Flour & Food Processors

Posted by:Lindsay S. Nixon Category: FAQ

You've got questions...

Q: If a recipe calls for onion flakes, can I sub granulated onion powder or fresh onion?

A: It would depend on the recipe. For example if you were making a cheese sauce, such as with HH mac n cheese, you wouldn't want to use fresh onion because mac n cheese sauce shouldn't have chunks of onion.

Q: What is white whole wheat flour? I only have whole meal flour or white flour.

A: See this post, it discusses the different types of flour. Whole meal flour and white flour aren't the same as white whole wheat.

Q: You have commented on oil and how it is bad. I understand and totally agree. I was wondering what you use when you cook items that you used to cook with oil?

A: It depends on the recipe... am I cooking or baking? I have a few blog posts on how to cook and bake without oil/fats, plus a video, that should help. Enjoy!

Q: If I want to substitute maple syrup for applesauce in a recipe, should I use the same amount the recipe requires?

A: I wouldn't recommend using maple for applesauce. For one, you would be adding a ton of sweetener (since maple is much much sweeter) and maple is a syrup, applesauce is not, so the liquid would be off. See my baking post for ideas, but this is a substitution I wouldn't recommend.

Q: What is the best brand of food processor? I don't want to waste my money.

A: This is the one I have. I am very happy with it and bought a slightly smaller version for my parents as a gift. They love it too.
