Cookbook Countdown: 13 Days to Go: Enchilada Casserole

Remember when I featured the Quick Queso from the cookbook (on day 18) and mentioned we were slightly addicted to it? Well, the addiction continues.

On Tuesday, my MIL flew here to SXM and I needed a quick & easy no-fuss dinner ready when she arrived... the solution, of course, was a casserole.

This Enchilada Casserole comes together in a snap and even though it uses two other recipes: Quick Queso and authentic Enchilada Sauce, you still can have the entire thing together and in the oven in about 8 minutes. Andlike pretty much every other recipe in the cookbook, it uses common, everyday ingredients you probably always have on hand like black beans and tortillas. 

After 30 minutes baking in the oven it's ready and well worth your patience. It reminds me what it is I love about casseroles... they're a complete, hardy meal. This one has veggies, protein and complex carbohydrates all in one pan and with so much nutritional value too! It's really hard not to love such a  delicious carefree meal.

I have also had a lot of luck taking this casserole to parties and serving it up to omni's who are otherwise terrified to try vegan food (Mexican food, I find, is the neutral cuisine!) Gosh, I just love this casserole...especially because it gives me an excuse to make more queso!

p.s. if you're wondering where a day went and why everything is suddenly renumbered... I had a bit of an oops. When I started counting back for this cookbook countdown, I treated the cookbook's release date (1/25) as day 1, rather than day 0... so we're actually only 13 days away from the cookbook's big release date!
