$1 Black Bean & Salsa Soup

This soup is so easy to make, I almost feel embarrassed blogging about it… almost. It’s so delicious I had to share. I’ve been eating it for as long as I can remember, but I couldn’t tell you where it came from or even if it’s my recipe. It got me through the many years I was a poor student and for that, I’ll always be grateful. Don’t let the few # of ingredients fool you, either, it’s one of Scott’s favorite healthy soups and that says a lot. (Sorry for the crappy photo, this soup is bashful!)

Makes 4 cups

Ingredients:
14 oz can black beans, drained and rinsed
1 cup frozen yellow or roasted corn
1 cup chunky salsa
1 1/2 cups veg broth
1/2 tsp cumin
hot sauce as desired
baked corn chips - optional

Directions:
1. Place 1 cup beans, salsa, broth and cumin in a blender.
2. Puree until smooth.
3. Transfer to a medium saucepan.
4. Add remaining ingredients except chips.
5. Stir to combine.
6. Heat thorougly over low.
7. Once warmed, serve.
8. Top the soup off with broken chips.

Note: You can skip the stove top and heat it in the microwave instead, too. My dorm room was without a stove and it worked just fine… but I did burn my tongue off a few times ;)

Simple and delicious! This is my favorite kind of recipe, just a few ingredients that come together to kick some serious butt! :)

I added in fresh lime juice, as I had a lime lying around. I also used Safeway Select Chipotle Salsa which is quite tasty and thus does not need any more hot sauce.

I make a similar soup! It was one of the first “homemade” things I learned to do! I think the basis of any black bean soup is basically black beans and veggie broth. :-) I usually add a bit of lime juice and fresh cilantro right at the end.
