Everything is designed to be one-pot or one-pan, budget-friendly, and easy to make even on busy nights!

WHAT YOU'LL BE EATING & WHY

Day 1 – Warming Lentil & Veggie Soup

Red lentils, carrots, celery, onion, garlic, kale, plus healing spices and a hint of lemon. 

🩡 Why: Protein + fiber flushes out post-holiday bloat and supports the liver.  

Turmeric also has anti-inflammatory and antioxidant properties and cumin supports digestion, promotes nutrient absorption, and offers antioxidant benefits too! 

Day 2 – Roasted Winter Veggie Bowl

Roasted brussels sprouts, sweet potato, red onion, and cauliflower served over quinoa with a delicious tahini-lemon dressing.

Roasted acorn squash is stuffed with quinoa, cranberries, kale, and walnuts and drizzled with an awesome maple-based dressing.

Day 7 – "New You" Detox Vegetable Stew

Carrots, leeks, celery, potatoes, parsley, and white beans are simmered in a light vegetable broth.
