I'm always getting emails and comments on the HH Facebook page asking how long HH Vegan Mayo recipe lasts (you can find this recipe on the blog and in all of my cookbooks.)
Here's the answer: we use the mayo pretty fast, but it typically lasts up to a week, although I do think I've stretched it longer than that. It really just depends on how fresh your tofu is and how you store it. Tofu lets you know when it's expired!
