Herbie of the Week: Elizabeth (She lost 100 lbs!)

Back in May, Elizabeth replied to one of my newsletters with this email and before-and-after picture (below). My jaw dropped to the floor! 

"Hi Lindsay, I just wanted to briefly share my one year before and after pictures. One day last year, my 2-year-old ran away from me and he nearly got to the road before I was able to catch him. I knew then I had to do something. After watching Forks Over Knives, I went vegan in May of 2012. Your recipes made my journey so much easier! Nearly 100 lbs lost and my son is now 3 and not nearly as hard to catch! Go veggie power!"


Umm, go veggie power indeed! 

What an incredible and i-n-s-p-i-r-i-n-g transformation, right?! 

Today Elizabeth tells her story in her own words as Herbie of the Week!

I have struggled with my weight nearly my entire life. My turning point was in May of 2012 when my then two-and-a-half-year-old son ran off while I was unlocking the font door. I was very overweight and out of shape at the time and was unable to catch my son until he was five feet from a busy road. I knew then that something had to change. I was unable to protect my son, play with him or be the role model I wanted to be. 

I watched the film Forks Over Knives and its like a light went on for me. I adapted a healthy, whole foods vegan diet. The weight came off easily and many of my health problems improved. I no longer have dangerously high blood pressure, am no longer pre-diabetic and a lot of the problems I was having with my skin improved. I'm 100 pounds lighter!The best part of all is that I can keep up with my energetic kid!


Happy Herbivore made the transition to a healthy vegan diet incredibly easy for me. When people ask how I lost so much weight, I always advise them to watch Forks Over Knives and to get some Happy Herbivore cookbooks

Another question I get all the time when people learn I don't eat meat or dairy is, "What do you eat then?" The answer? Lots of yummy stuff thanks to Lindsay!
