Q: What are your thoughts on eating baked potatoes? I read in The Starch Solution that there is nothing wrong with baked white potatoes if prepared plain and maybe a fat free dressing added to it. Thanks!

A: I LOVE potatoes. Eat them daily. They’re very healthy -- always have been, it’s what people put on them (sour cream, butter, cheese, bacon, etc) that can make them unhealthy.

Q: I am making the Gluten-Free Flour Blend (from EHH). If I want to make the Strawberry Cupcakes (from HHC) do I omit the baking powder, soda and salt?

A: NO! Use the blend in place of the flour but do not alter the recipe. Use the blend the way you’d normally use whole wheat flour.
