Fat-Free Whole-Wheat Easy Homemade Biscuits (Banana Biscuits)

A great secret to cutting the fat in biscuits is using a banana in place of butter or shortening. In my original recipe (p. 38 of HHC) I call for using a food processor, but you can do it by hand, too! 

Here’s how:

I added the full banana in the video because I wanted a banana-flavored biscuit. (For a less banana taste, use half and a light greenish banana). 

If you don't have the book, here is the recipe: Whisk 1 cup white whole wheat flour, 2 tsp baking powder, 1/2 baking soda (you can leave this out), pinch salt. 1/2 to 1 banana (more banana, more banana flavor), 1/3 c soy milk, perhaps a splash more, until its wet and thick. Drop spoonfuls on a greased cookie sheet (or line with parchment paper) and bake about 10-12 mins 400F, or until firm and golden at the edges.

Banana biscuits with raisins and cinnamon? So unbelievably good and really easy! For a treat, add a little bit of a glaze or icing (p. 225 of HHC) -- vanilla or almond extract with powdered sugar and a little non-dairy milk.
