Meet our Herbie of the Week: Rachel B!

Rachel had always struggled with her weight, and after realizing she no longer wanted to eat meat, she went vegetarian -- but she was still overweight.

By making healthier choices, she was able to lose 20lbs, but the more she engrossed herself with a plant-based diet, she eventually eliminated dairy as well.

Within 7 months, Rachel lost an incredible 70lbs and is now an inspiration to those around her!

I have struggled with my weight for most of my life. I was terribly unhappy when I reached about 215 pounds on my 5’3” frame at the age of 26. I adopted a vegetarian diet simply because I realized I did not want to eat meat any more, but I was still an overweight vegetarian. Thinking that I might not get enough protein or that I might be missing essential nutrients from not eating meat, I decided to do some research on diet and nutrition.

The first blog I came across on Facebook was Happy Herbivore. I loved the positive vibe I got from it, and was excited to try new recipes. I lost about 20 pounds in a year simply by making a few healthier choices as a vegetarian. But the more I engrossed myself in plant-based eating, the more I became motivated to eliminate dairy products as well, especially after learning about conditions of animals in the meat and dairy industries and after seeing stories of people who forego meat and dairy and how absolutely healthy they are. It was a win-win decision. No meat or dairy, less animal suffering, more health!

At the start of a new year, I made a resolution to myself to cut out dairy and processed foods. After I made the decision to give up dairy, I saw results very quickly and it was not hard to stick with it (I haven't had dairy for more than 3 years now, my desire is gone). I ended up losing 70 pounds in 7 months for a total weight loss of 90 pounds in a little over a year. Friends, family and co-workers watched my transition and were in awe. It felt great to be an inspiration to people around me.

I enjoyed eating big salads, lots of vegetables, and trying new foods. I am now a lover of brussel sprouts and onions! Two things I would never touch in the past. I broke my soda addiction, and no longer had afternoon slumps from sugar highs.

When I first cut out dairy and processed foods, I had a terrible acne outbreak that lasted over a month, but after that month passed, my skin was the clearest I had ever seen it. The most popular comment I received from people was “Wow, your skin is amazing!” I felt happier, I had more energy and I felt a new zest for life.

I have maintained that weight loss for almost 3 years now, and it is one of my proudest accomplishments.

For those transitioning: I have reaped so many health benefits. I don't see food the same way I used to. I value health much more than I ever did before. I see food as a way to nourish and care for my body so that I can live a rich and fulfilling life. I don't take my health for granted anymore. I appreciate people who grow my food and don't want to be a mindless eater anymore. When you realize that you can eat in such a way that not only benefits your health and well-being AND tastes good, it's a no brainer.
