  1. Drain beans (reserving liquid) and rinse.
  2. Transfer beans to a food processor and add remaining ingredients.
  3. Puree until smooth and creamy, adding 1-2 tbsp bean liquid as necessary.
  4. Taste, adding more vinegar, lemon, or garlic as desired.
  5. Refrigerate up to 3 days.
