Make It Monday: Pizza Chili šŸ•šŸ„£ (Yes, Really)

Posted by:Lindsay S. Nixon Category: recipe

If you’ve ever stood in the kitchen on a Monday night thinking,

ā€œI want pizza… but I also want something warm, filling, and easy,ā€

this week’s Make It Monday recipe is for you:

Meet: Pizza Chili šŸ•šŸ„£

Exactly what it sounds like—and somehow even better than you’re imagining.

This delicious, one-pot meal brings together classic chili comfort with unmistakable pizza flavors. It’s hearty, saucy, satisfying, and built around simple, familiar ingredients—including kidney beans for staying power and plant-powered protein.

It's also one my most top-rated meal plan recipes!

Why Pizza Chili works:

ā˜‘ļø One pot, minimal effort

ā˜‘ļø Deeply comforting (without being heavy)

ā˜‘ļø Kid-friendly, freezer-friendly, and leftover-approved

ā˜‘ļø Scratches the pizza itch without ordering takeout

It’s the kind of meal that makes the house smell amazing and convinces you that cooking on a Monday night wasn’t such a bad idea after all.

What You'll Need: (serves 4)

1 onion (any), dice

4 garlic cloves, mince

1 bell pepper (any), seed and dice

2 tsp chili powder

1 tsp dried oregano

1 jar (9-oz) salsa

1 1/2 cup marinara/pasta sauce

2 cans kidney beans (or other), drain and rinse

How to Make It:

1. Line a large pot with ¼-cup water.

2. Add onions, garlic, and bell peppers and sautƩ until translucent.

3. Add chili powder and oregano. Stir to coat and cook 1-2 minutes.

4. Add 1 cup water, salsa, marinara, and beans, stirring to combine.

6. Reduce heat to low and simmer 10-20 minutes.
