Make it Tonight: Queso'd Quinoa

This week’s Make It Tonight recipe is one of those why-don’t-I-make-this-every-week meals:

🌱 Queso'd Quinoa

Creamy, cozy, and endlessly customizable—these bowls are packed with beans, corn, fluffy quinoa, and a near-instant homemade vegan queso that tastes indulgent but is totally weeknight-appropriate.

What You Need:

(serves 2)

3/4 cup black beans (or refried, kidney, lentils, etc) - about half a can

1/2 cup frozen corn, thawed in hot water

1 cup cooked quinoa, rice, or other grain

Quick Queso + 1/4 cup salsa

optional toppings: shredded lettuce or cabbage, salsa or pico, hot sauce, green onions, crumbled corn chips, sliced olives, guacamole... anything you have on hand that works for you!

How to Make It:

1. Microwave or cook the quinoa/rice if you haven't already.

2. Whisk together Queso ingredients (except the salsa): 1 cup plant milk,  1/3 cup nutritional yeast, 2 tbsp flour, 1 tsp granulated onion powder, 1/2 tsp granulated garlic powder and ground cumin, 1/4 tsp paprika or smoked paprika, dash of chili powder if desired.

3. Cover and bring Queso to a near boil then reduce heat to low and stir/cook until thick. Stir in salsa.

4. Toss together quinoa/rice, beans, and corn.

5. Drizzle with Queso and top with toppings.

That’s it—dinner done fast 👏 👏
