Meet our Herbie of the Week, Todd. Todd and his wife switched to a plant-based diet and are astounded at how great they feel- and how much they enjoy eating vegan with their 3 young children! Q: Please tell us a little bit about yourself.
I’m 34 and have been married to my wife Crystal for over 10 years. We have 3 children ages 6, 4, and 2. I work in IT and have a Master’s in Computer Information Technology. I’ve always been on the big side both height and weight wise. At my largest I was over 250, but I’ve hovered around the 240 mark for the last few years.
Q: Did you have any medical issues or problems?
In June of 2005 my father was diagnosed with esophageal cancer. His health deteriorated quickly and he passed away just 8 days before our first child was born in November of 2005. Earlier this year I started looking at my life and my health more closely. I realized that if I kept doing what I was doing I was going to end up in a similar situation to my father. That would give me only 20 more years at best. It scared me and at the same time motivated me to make changes.
Q: What led you to try a plant-based (vegan) diet?
Crystal had watched the documentary “Fat, sick and nearly dead” and that started us down the path of a plant based diet. I got a juicer within days of watching the movie and started on that. The next grocery shopping trip I simply completely stopped buying meat. About a week after that I stopped buying all animal based products. I started noticing a change almost immediately. The weight was simply melting off and I felt fantastic. I picked up my workout routine and the weight began coming off even faster. Before I knew it I had lost almost 10 pounds in 2 weeks.
Q: How did you find out about Happy Herbivore?
We found Happy Herbivore Cookbook and started trying recipes in that almost immediately. The biggest surprise to me was that I suddenly felt like for all my life I had been missing out on incredibly tasteful and wonderful food. Everything was so flavorful and colorful and best of all healthy and filling!! We had some concerns with moving our children over to a plant based diet. Our 6 year old had a tendency to be a picky eater and often refused to try new foods. Much to Crystal and I’s surprise he took to it in an amazing way. He loves the foods we eat. He often asks others if they eat “veganly”.
Q: Have you noticed any health benefits since making the transition?
I am absolutely astounded at how great I feel and how easy the change has been. Happy Herbivore has been a huge help in this transition and I’m so grateful for all the recipes and insights!
