My mom is back for another guest post. As I mentioned last time she stopped by, she and my father are cooking their way through my cookbook.
Here are some of the recipes from my cookbook, as prepared by my parents -- and with my mom's commentary:
Root Beer Float Cupcakes(p. 214)"Your Dad made these cupcakes one afternoon while I was doing laundry. They smelled soooo good when they were baking. I thought these were very good..different...but tasty. We want to try it with Dr. Pepper."
Chickpea Noodle Soup "This soup on a cold day was excellent. What a comfort food. We were getting a hail storm and it was perfect--EXCELLENT. We had enough leftovers for the next day so we were looking forward to our lunch. It was good reheated as well. This is the ultimate comfort food. We really love it."
Steak & Pepper Fajitas(p. 103)"Daddy just LOVED these. I love portobello mushrooms so you know I liked them! They were so delicious---you don't need any kind of meat because the onions and the peppers and the mushrooms---very very good. Portobello mushrooms are so good."
Teriyaki Chickpeas(p. 127) "Daddy and I both love anything with an Asian flavor so this was a sure thing. It was really nice, very easy. We really enjoy Asian food and this is one of our favorite Asian-flavored dish. We even got the wrong salsa at the store and it was still very good."
Carrot Cake Cupcakes (p. 213) "As I mentioned last time, your father has been after me to make these cupcakes. Ughhhh TOP OF THE LINE! Our favorite. These were both mine and your father's favorite of all the recipes we made. We took two up to Aunt Connie's and she liked them too. They are so good and I like that it's a dessert with carrots."
My mom also wanted me to point out that they've made the Southwestern Pasta Salad(p. 183) twice more -- saying it's their favorite side dish at lunch since it's so refreshing.
