I had a thing for Burger King's onion rings---and by "thing" I mean I enjoyed a small order almost every day for a year. ( Oh, College! )
Needless to say, I felt a little deflated when I found out BK's onion rings (and pretty much all onion rings everywhere) are not vegan. I took this as a "good thing" though because onion rings are not exactly healthy and the less temptation the better... still, I found myself missing onion rings from time to time... especially any time I was eating a veggie burger.
(I'm convinced there are two kinds of people in this world: those who like fries with their burgers and those who prefer onion rings over fries. I am most definitely in that second camp!)
Anyway, I guess I needed the motivation of a cookbook to get me to finally try my hand at them, and really, I could kick myself for waiting so long. This was one of the first recipes I wrote for my cookbook -- and oddly enough, to compliment the mushroom burger I blogged about yesterday.
They are so easy to make it's criminal and they taste exactly the way I remember BK onion rings, only a lot less greasy. They're also made with whole-wheat breading...and zero added fat. Talk about a tasty snack you can feel good about when you eat the entire tray by yourself!
