Lentil Joes

- ¼ cup vegetable broth
- 1 whole onion, diced
- 2 whole garlic cloves, minced
- 1 whole green bell pepper, seeded and diced
- ½ cup tomato sauce
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp Dijon mustard
- 1 tbsp low sodium soy sauce
- 1 tsp vegan Worcestershire sauce (optional)
- 2½ cups cooked lentils
- ¼ tsp cumin
- 1 tbsp brown sugar
- hot sauce
- paprika
Instructions
Line a large skillet with a thin layer of vegetable broth and saute onion, garlic, and bell peppers until onion is translucent, bell peppers have softened and turned a mellow green, and most of the broth has evaporated. Add remaining ingredients (hot sauce or cayenne as desired, plus a few dashes of smoked paprika) and stir to combine. Warm, stirring occasionally, over low, and then serve on buns or bread of your choice.
