Veggie Stuffed Spelt Lasagna - serves 8
1 box spelt lasagna noodles (or other), cooked al dente
2 zucchini, sliced into 1/4″ rounds
2 summer squash, sliced into 1/4″ rounds
1 cup sliced mushrooms
