So why am I a “Happy Herbivore”? Well I’m happy because I’m healthy! (That wasn’t always the case).
I’ve been there before - staring at my reflection or looking at pictures and thinking “I need to lose weight” and for a week or two I’d go to the gym and try some fad diet but eventually, I’d give up. It was an ugly cycle.
My Awakening: After I went through a serious health scare in my early 20s, I realized I had to do something. Clearly the way I’d been living wasn’t good for me. I also knew another diet wasn’t the answer. I was a vegetarian for most of my life but caved to peer pressure in my late teens. When I decided to “get healthy,” going back to vegetarianism was my first step. I thought it would help me make better food choices and it did. I started losing weight and felt better in general. I also started taking aerobic classes at the gym and lifting weights. Eventually, I felt healthier and stronger and I had cut my dress size in half. But! I still felt there was room for improvement. I started buying nutrition and health books left and right. Along the way I’ve learned a great deal of information and I’m happy to share it with you. Once I started eating a diet high in produce and whole grains with anything processed being used sparingly, I got the results I always wanted — best of all, I don’t just SEE the change, I FEEL it.
So what should you eat? Well, if it doesn’t come from Nature directly, chances are you don’t want to eat it!! This philosophy has never led me astray… I eat mostly produce (fruits and vegetables) but also enjoy legumes and whole grains. I don’t eat anything that is overly processed (such as fast food, all purpose flour, white rice, junk foods, tv dinners) and use slightly processed foods (such as whole wheat pastry flour, soy milk) sparingly. The foods I eat are naturally low in calories and low in fat. It’s a no nonsense dietary regime I adore!
