Cookbook Countdown: 12 Days to Go: BBQ Chop Wrap...err Salad

I didn't include a single salad recipe in my cookbook for two reasons. First, there is this awful stereotype that vegans and vegetarians live on salads. Any time someone says something along the lines of "so what do you eat, salads?" I die a little inside. Or even worse, "Of course you can eat here, we have a salad on the menu" because a bowl of iceburg lettuce is so delicious and filling!

So... with a little attitude, I intentionally wrote an entire vegan cookbook -- with some 200 recipes -- without a single one being a salad. I had something to prove I guess.

Which brings me to point number 2. There is an equally bad stereotype around low fat and fat-free recipes... people think low-fat and fat-free has to mean deprivation or is limited to "dieter foods" like salads, soups and stews -- and well, I wanted to disprove all that. It's totally possible to eat a healthy low fat diet and never have to eat a salad... Remember my friends, you can have your low fat cake and eat it too! 

(For the record, I LOVE salads. I eat them almost every day because I think they're an easy way to get in servings of vegetables, antioxidants, fiber, minerals, vitamins, etc. but my point is, is that a salad is not the only choice when you want to eat healthy, low fat food.)

Which brings me to today's teaser recipe. This salad is actually a wrap in my cookbook, but you can forgo the tortilla and have a salad, which I did here. 

It's the called BBQ Chop Wrap. It's easily one of my favorite warm weather meals and it comes together in a flash. Many of my student testers remarked this was their new go-to choice for a school lunch because it was so easy to make and they felt better about eating something with so many vegetables, than just sticking to PB&J everyday.

Cookbook Countdown: 13 Days to Go: Enchilada Casserole

Remember when I featured the Quick Queso from the cookbook (on day 18) and mentioned we were slightly addicted to it? Well, the addiction continues.

On Tuesday, my MIL flew here to SXM and I needed a quick & easy no-fuss dinner ready when she arrived... the solution, of course, was a casserole.

This Enchilada Casserole comes together in a snap and even though it uses two other recipes: Quick Queso and authentic Enchilada Sauce, you still can have the entire thing together and in the oven in about 8 minutes. And like pretty much every other recipe in the cookbook, it uses common, everyday ingredients you probably always have on hand like black beans and tortillas. 

After 30 minutes baking in the oven it's ready and well worth your patience. It reminds me what it is I love about casseroles... they're a complete, hardy meal. This one has veggies, protein and complex carbohydrates all in one pan and with so much nutritional value too! It's really hard not to love such a  delicious carefree meal.

I have also had a lot of luck taking this casserole to parties and serving it up to omni's who are otherwise terrified to try vegan food (Mexican food, I find, is the neutral cuisine!) Gosh, I just love this casserole...especially because it gives me an excuse to make more queso!

p.s. if you're wondering where a day went and why everything is suddenly renumbered... I had a bit of an oops. When I started counting back for this cookbook countdown, I treated the cookbook's release date (1/25) as day 1, rather than day 0... so we're actually only 13 days away from the cookbook's big release date!

Never sail with Carnival

You've probably caught my excited posts about the Happy Herbivore Cruise... I was supposed to go on a wonderful 7-day vacation with close to 100 HH fans aboard Carnival Liberty.

Many months ago I contacted every cruise liner to see if they would accomodate a large vegan group. Carnival not only promised to accomodate -- but said they were happy to and arranged a really great group package for us.

After everyone booked (some 60 cabins) Carnival drops the bomb on me last week that they will NOT accomodate our groups special dietary needs. They will only offer us vegetarian meals, not vegan.

I tried to speak with everyone I could. I spent days crying, yelling, emailing, racking up absurd phone charges trying to work something out. I even offered to work with the dining team to adapt their set vegetarian menus...

...and they refused.

I cancelled the group this morning and made sure to let them know that I'd make this public... I explained while I generally try not to abuse the "powers of the Internet"; I'm gladly making an exception to let my blog readers, twitter followers and Facebook fans know. Sure that may only be 10....15,000 people, but they are my friends in veggies, and this would obviously be relevant information for them.

If you were going on the cruise, please call and cancel your reservations by 1/24/11 to get a 100% FULL REFUND. Be sure to tell them WHY you are canceling. 

I am so sorry and disappointed -- I can't begin to convey it in words. I have been crying and sick over it for days... hoping for a resolution. In the end, I'm glad that I found this out now, rather than my group was on the ship or someone else was duped.
