Herbies of the Week: Mama & Papa Herbivore (2 Years Plant-Proud!)

On January 19, 2012 my Dad had a heart attack. The following day he and my Mom both went plant-based. (I posted this on Facebook earlier this week and they were SO incredibly touched by all your kind words!)

To celebrate their plantiversary, I asked Mama and Papa Herbivore to give you all an update on how things are going now that they're two years plant-proud. (You can read about their first year of being plant-based here.)

Here's what they had to say in their own words...

Hello and Happy New Year from Papa & Mama Herbivore. Another year gone by, we are now plant-based for two years.

The year has been good to us, we are truly blessed not to have had any medical issues. Our daughter and son-in-law have a new home, and Lindsay has written another healthy and well done cookbook.

We continue to cook from Lindsay's books, but we are now even trying to tweak some recipes on our own, using our daughter's input.

Thanksgiving Gravy (HHC) with Stuffing (HHC), French Toast (HHC), "Cheese"Ball (HHLL), Ruby Chocolate Muffins (HHLL), Portobello Steaks (HHC), Everyday Mushroom Gravy (EHH), Stuffed Acorn Squash (HHA)

When we visit my family in PA they now respect our eating style and have even tasted some of the things we have made and enjoyed them. Will my omni family change to plant-based, only they could want to make that change. But I am grateful that maybe now they are more aware of what they are eating after being around us.

Also, as our daughter has mentioned, where ever you go you can find something to eat. We don't eat out often but when we do we try to find a restaurant the could accommodate us, even if it is just a salad and steamed veggies. Thai food has become one of our favorites.

Thanks to our daughter and son-in-law we had an amazing New Year with them and Scott's family on the beach in Charleston. Although we prepared some recipes to take with us, it was such a treat to have our own "Top Chef" Lindsay to cook some of her delicious recipes for the four days we were there.

Eating plant-based has now become a way of life for us. "It's just not eating, it's a lifestyle".

Our thanks again to our daughter for her guidance and support through the year and also to the many Herbies out there for their kind words.

We will close for now by saying, our New Year's resolution is to just keep on doing what we are doing and remember how good we feel.
