Mmm MMM! This beautiful dish is heavenly (and I’m not just talkin’ about the taste). It’s so easy to make! It might very well be the easiest & quickest squash recipe on earth
This recipe also uses lime rice (or if you want to impress people, call it lime ‘pilaf’) which is a rockin’ recipe all on its own. Add lime rice into your favorite Mexican dishes for a “wow” effect.
Serves 2 or 4 as a side
Ingredients:
2 delicata squash
1 cup frozen yellow or roasted corn
lime rice (recipe below)
teriyaki chickpeas - optional for a boost of protein and another flavor dimension.
** prepare lime rice a day or more in advanced for a quick meal and enhanced flavor
Directions:
1. Stab squash with a fork in two places
2. Heat in microwave until skin is soft and squash is fork tender (about 7 minutes)
3. Carefully transfer to a cutting board
4. Slice in half length-wise
5. Drag a fork length-wise to remove seeds
6. Reheat frozen corn & rice as squash slightly cools
7. Combine corn, rice & chickpeas in a large bowl
8. Spoon stuffing into squashes
9. Use remaining stuffing to garnish plate around squashes
10. garnish with a lime wedge - optional
Lime Rice
Ingredients:
1/2 cup uncooked brown rice
1 cup water or veg broth
1-2 small limes
salt
Directions:
1. Cook brown rice in water or broth
2. Once cook add juice of 1 lime, stirring to combine
3. Taste test, add additional lime if desired
4. Salt to taste
5. Store in an air-tight container in fridge
6. Heat for about 3 minutes in the microwave before serving

Coco, Delicata squash as a sweet, nutty flavor - a cross between a sweet potato and butternut is my closest description. It’s very good.
