Ultimate Vegan Breakfast Burrito

Alright, so you don’t have to have this burrito for breakfast. I admit I served it for dinner… Point is, no matter what time of the day you eat it, you’ll love it… This breakfast burrito makes for a quick-n-easy meal and if you do serve it for breakfast or brunch, you can dig in knowing your fueling your day with wholesome tastiness. It might even give you a little bounce in your step.

Makes 2-6 burritos (depending on tortilla size)

Ingredients:
1 Oil-Free, Tofu Scramble
1/4 cup coarsely chopped fresh cilantro
1/2 tsp ground cumin
tomatillo sauce
guacamole - optional
salsa or pico de gallo
nacho cheeze - optional
whole wheat or sprouted tortillas or wraps

Directions:
1. Make cheeze if using, set aside
2. Make tofu scramble according to directions
3. Add cilantro and cumin 1 minute before scramble is done cooking
4. Spoon tofu scramble into the center of the tortilla or wrap
5. Add tomatillo sauce as desired and cheeze if using
6. Wrap up
7. Top with salsa and guacamole if using

I’m a sucker for colorful foods! This really is the ultimate, and I’m sure it would give you a little bounce in your step!

MMMM, love it! The thing I have missed most since going vegan is Mexican food (my main weakness) and dishes like this really come in handy when I am missing my cheesey enchiladas. Thank youu!

Awesome. I love breakfast burritos. I haven’t made one in a while though, and I don’t know if I’ve ever made a vegan one. I’m going to star this because I’m sure Bobby will love it too :)

My kind of breakfast! Anything that features a tofu scramble is okay by me :) (And I am still dying to try that nacho cheese!!)

this should be called the christmas burrito! it is just so tasty looking. i hardly ever cook in the morning- actually, scratch that. i’d say i NEVER cook in the morning haha i’m just too lazy

My boyfriend came home with an industrial sized (6 pound) can of tomatillos yesterday. I separated it into about 1 1-cup increments in the freezer! Looks like I’m going to have to try this recipe, since I already have the ingredients! It looks great: I love breakfast burritos, but I’ve always wished they were healthier.
