Ranch Potato Zucchini Tacos

While visiting a Mexican restaurant recently, I noticed “Potato Tacos” on the menu. Of course they couldn’t make them vegan (premade with cheddar, milk and ranch dressing) so I settled on the mixed veggie taco. I still wanted to try a potato taco, however, so I took a chance and made my own. They’re delicious & easy!

Potato Ranch Tacos - makes 6 burritos and 8-10 crunchy tacos

Ingredients:
2 large brown potatoes, diced small (about 3 cups)
1/2 cup fat free soy milk
1 bunch green onions (8-10 onions)
1/4 cup nutritional yeast
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 tsp dry parsley
1 tsp sea salt
1/2 tsp black pepper
tortillas/sprouted wraps/taco shells

* you can use 2-4 tbsp of vegan ranch in place of the garlic, onion and parsley but reduce soy milk equally

Directions:
1. boil potatoes until tender, then drain
2. transfer to a large bowl, add all other ingredients
3. using a hand mixer, whip until smooth and creamy (a little chunky is okay)
4. serve with corn taco shells or sprouted wheat wraps/tortillas.
5. use chopped lettuce and tomatoes for tacos or steamed zucchini for burritos

For steamed zucchini:
- slice 4 small zucchini’s into 1/4″ rounds (about 4 cups worth)
- thinly slice 1 lemon
- place zucchini rounds in steamer
- place lemon slices on top
- steam 14 minutes
- sprinkle salt and pepper on top

Here is a picture of the ranch potatoes, they’re pretty awesome on their own!

Oh just a question, there’s so many sugars out there - do you know which one is the best all rounder?! Hehe, sorry I always ask you these question - that’s coz you’re such a (vegan) nutrition know-how ;0)

This looks good. I recently made potato taquitos and although they need a little bit of tweaking (i had trouble with the corn tortillas breaking) the “mexican mashed potatoes” were awesome. I’m looking forward to trying this and hopefully it will help me figure out the finishing touches on my taquitos.

CECILIA, I prefer raw turbinado sugar (i buy my store’s generic brand, but a common named brand is “Sugar in the Raw” - I hope that helps). As long as its not refined (i.e. “Domino” white sugar) it should be 100% vegan. I believe FLorida Crystals are also vegan - also look for the vegan label. I buy Hains Confectioners Sugar, which has a vegan label :)

RICKI, it’s certainly healthier too! *and* my coworker just told me they put animal lard in the potatoes too, so they aren’t even vegetarian! That’s like the chain Chipotle and putting pig fat in their pinto beans! WHY?!??!

I think I remember you being in LA? So, if you are ever down in San Diego, there’s a great Mexican restaurant with a lot of vegan options (the owner is vegan) called Pokez (http://www.pokezsd.com/) and they have amazing potato tacos and whatnot. Yum! My stomach is growling! Phil is from sd but I won’t be out there again until early sept (during which I will probably eat at Pokez at least 4 times).

Definitely NOT fat free, but it is a nice indulgence…

I love the idea of steaming zucchini like that with the lemon! That sounds delicious–topped with some fresh herbs, it would be a tasty dish on its own!

Oh wow, those tacos look really REALLY good… I like how you steamed the zucchini with lemon too.

One of my favorite mexican restaurants serves seared potatoes with their veggie fajitas. I like the texture alongside the other, crispier veggies. But your potatoes look about a million times better!

What’s this about sugar though? Pardon me for being a dunce, but how can sugar fail to be vegan? Isn’t it just, you know, sugar?

omg, too funny - I have a huge zucchini someone gave me, potatoes and some whole wheat tortillas at home and have been wondering what to do with them. This is so perfect!!! It looks really good and sounds tasty, I can’t wait to give it a whirl!!
